Marci’s Salads Reimagined, created by sisters Megan and Sarah Murphy, grew from their passion for healthy living and good food.
“We’ve been planning Marci’s for ten months, starting in the fall pre-pandemic,” said Megan. “We were originally supposed to open in June and when this all started happening, we reassessed things and slowed down a little bit.”
Slated to open early next month on Grannan Street, Marci’s menu will consist of twelve pre-designed salads with lots of fresh ingredients and different flavors and textures; it will also offer five types of smoothies. Everything is fresh cut and roasted in the restaurant, the dressings are made from scratch and there are meat options to add to salads.
“All of our dressings are vegan, gluten and dairy-free; not all the salads have all of those components, but they can very easily made to suit somebody’s dietary need,” said Sarah. “We know it takes a lot of work to make something like that and we want to make it easy for people to eat healthy.”
“We really wanted to have something for everyone,” added Megan.
Mirage Foods’ is one of the restaurant’s local suppliers, who also work with many restaurants uptown. Their bacon and chicken will also come from a local supplier.
The sisters are using New Brunswick products and working with local companies and artists as much as possible.
“Our construction crew is a local company, our bowls that we’re using in the restaurant were designed by local potter Denise MacLean,” said Megan. “One of the most interesting parts about opening it is getting to meet all of the amazing talent in the city.”
Artists Hilary and Jake Creamer-Robinson are creating a mural and wall drawings for the restaurant interior.
Megan and Sarah are excited to be part of the uptown scene and hope they will be able to share customers with next door neighbor Rogue Coffee.
“The whole building is great; the Five and Dime is up the street, they kind of operate in the evening, and then Italian By Night is a great restaurant, said Megan. “We’re really happy with the whole building, they’ve done a beautiful job with this whole area.”
Marci’s is on track to open in early August and plans to add a patio for additional outdoor seating.
“I feel like people are excited to have something positive happening and something new and different to add to an already great uptown scene and I’m excited to be part of it,” said Sarah.
