With the Super Bowl and more importantly Super Bowl Parties on the way I came across a few recipes you might like to try for your next wing ding.
Sticky Soy Sauce Wings
Ingredients
WINGS
2 pounds chicken wings
1 tablespoon extra-virgin olive oil
Salt and freshly ground black pepper
1/3 cup flour
STICKY SAUCE
2-3 tablespoons brown sugar
6 tablespoons soy sauce
2 tablespoons rice vinegar
1½ tablespoons toasted sesame oil
2 tablespoons garlic, minced
1 teaspoon red pepper flakes
1 teaspoon cornstarch
1 tablespoon water
1 tablespoon toasted sesame seeds
Green onion, thinly sliced
Preparation
FOR THE WINGS:
1.Preheat oven to 400°F
2.Dry chicken wings with paper towel. Place wings in a large bowl and add olive oil, salt and pepper. Sprinkle with flour; only to dust, not to saturate.
3.Place on baking sheet with rack; wings should not touch each other. Bake until crispy, about 45 minutes.
FOR THE SAUCE:
1.Combine brown sugar, soy sauce, rice vinegar, sesame oil, garlic, red pepper flakes in a saucepan; lightly heat. Add cornstarch and water and let thicken slightly.
2.Add wings to a bowl and lightly toss in sauce — just enough to stick to wings.
3.Toss in sesame seeds and garnish with green onion.
4.Pour remaining sauce in a bowl on the side for dipping.
Spicy Sesame-Orange Wings
Ingredients
2 pounds chicken wings
1/2 cup orange juice
1 tablespoon vegetable oil
2 cups orange pop
1/2 cup Sriracha
1/4 cup light brown sugar
1/4 cup unsalted butter
1 tablespoon fresh garlic, chopped
1 tablespoon orange zest
salt, to taste
4 tablespoons roasted sesame seeds
1/2 cup sliced scallions, for garnish
SWAP OPTION: Orange juice concentrate can be swapped for regular orange juice.
Preparation
1.Preheat oven to 350 F.
2.Combine wings with orange juice and oil, and toss until coated. Place onto a large baking sheet fitted with a cooling rack in a single layer and roast for 30 minutes. Flip the wings halfway through, until the wings are golden and crisp.
3.In a small saucepan, combine soda, Sriracha, sugar, butter, garlic and orange zest. Season with salt and bring to a boil, whisking until all ingredients are fully combined. Bring to a simmer and let reduce by half, stirring occasionally, about 20 minutes.
4.In a large, clean bowl, toss wings in sauce with an abundant amount of sesame seeds. Garnish with scallions and serve.
Maple-Black Pepper Wings
Ingredients
2 pounds chicken wings
1½ tablespoons salt
4 tablespoons unsalted butter
2 tablespoons freshly ground black pepper
1 tablespoon chopped fresh garlic
1/2 cup maple syrup
1 cup low-sodium chicken broth
1/4 cup apple cider vinegar
2 tablespoons fresh rosemary, chopped fine
4 tablespoons chopped parsley, for garnish
TECHNIQUE TIP: Make sure the sauce comes to a glaze consistency.
Preparation
1.Preheat oven to 400 F.
2.Season chicken wings with salt, place onto a large baking sheet fitted with a cooling rack in a single layer and roast in the oven for 30 minutes. Flip the wings halfway through, until the wings are golden and crisp.
3.Heat butter until bubbling, add pepper and garlic, and cook for 15 seconds, taking care to not let the garlic burn. Add the maple syrup, chicken broth and vinegar, and let simmer until reduced by half. Add the rosemary and bring to a glaze consistency.
4.Coat the cooked wings in the glaze, finishing with parsley.
